• 2 cups diced fresh pineapple
  • 1 cup diced red pepper
  • 1/2 cup chopped cilantro
  • 1/4 cup finely chopped red onion
  • 3 tablespoons finely chopped jalapeno pepper, stemmed and seeded
  • 1 tablespoon ABQ Olive Oil Company Ripe Peach Balsamic vinegar
  • 1 ripe tomato chopped
  • 1 tablespoon ABQ Olive Oil Co Chipotle oil
  • Salt, to taste


In a medium bowl, combine pineapple, red pepper, cilantro, red onion, jalapeno, tomato, ripe peach balsamic and chipotle oil. Stir until well combined. Season with salt, to taste. Serve at room temperature or chilled.

Yield: Makes about 2 1/2 cups salsa
