• 4 NY Strip steaks
  • 8 oz Blue Cheese, crumbled
  • 2 Tbl Dark Chocolate Balsamic reduction
  • 1 cup Dark Espresso Balsamic
  • 2 Tbl butter
  • Salt and Pepper to taste


Season meat with salt and pepper. Grill steaks 10-12 minutes or until desired doneness. During the last 3 minutes of grilling, sprinkle blue cheese over steaks. Remove from grill and allow meat to rest for 5 minutes before serving.

Meanwhile, in a small non-reactive saucepan, combine 1 cup Dark Espresso and 1 cup Dark Chocolate Balsamic Vinegar. Bring to a boil, reduce heat to low. Simmer uncovered until reduced by half, stirring occasionally. Remove from heat, add 2 Tbl butter and stir to melt.

Drizzle reduction over steaks and serve immediately—Yum!
